History

BŌKEN Sake was founded by Daisuke Nakajima, who grew up in Japan and later moved to the United States for his studies and career. During frequent business trips back to Japan with American colleagues, Daisuke would end long days by sharing sushi dinners and sake, watching as his guests discovered just how delicious and complex sake could be. Those memorable evenings—and the connections, conversation, and joy they inspired—became the heartbeat of BŌKEN. Today, BŌKEN brings that same spirit to the U.S. through a collection of distinctive sakes crafted by skilled artisans at centuries-old, family-run Japanese breweries, balancing deep tradition with thoughtful innovation.

Hiraizumi Honpo
Nestled in the serene landscapes of Nikaho City, between Mount Chōkai and the Sea of Japan, Hiraizumi Honpo Brewery has been crafting exceptional sake since 1487. As Japan’s second-oldest brewery, its legacy spans over five centuries of resilience, artistry, and innovation.

The yamahai style, a hallmark of Hiraizumi, uses the natural fermentation of lactic acid to develop sake with extraordinary depth and complexity. The brewery’s cold winters provide the perfect conditions for this time-honored technique, resulting in a flavor profile that is bold, nuanced, and unmistakably traditional.

Takagi Shonzu

Takagi Shuzo has been crafting remarkable sake since 1884 in Akaoka, Kochi Prefecture, a vibrant merchant town steeped in history. Over the decades, the brewery has faced numerous challenges, but its commitment to quality and perseverance has carried it through by honoring and becoming a cultural pillar of the local community. One of their most iconic cultural contributions became a staple of the lively Dorome Festival in Akaoka, where oversized cups of the brewery’s sake take center stage in spirited drinking contests, bringing people together in celebration.
